Light Snacking For Late Nights

Raise your hand if you’ve been on a diet.
Ask me this, and I’ll raise both hands, and probably keep them up. Over the last seven years I have lost and gained back the same forty pounds, and over again. Right now I’m in the losing and gaining stage, having taken off 25 and putting back 10 as I write this. It’s my goal to make sure the weight stays off this time, but I find the one challenge I face when shedding pounds is menu variety. I tend to play it safe, and only eat the foods with known Weight Watchers points values.
Naturally I get bored, though, and eventually binge. This time, I’m cooking more and adding the variety I need – and making lower-point versions of foods I love.
I tend to want to snack as I write, and when I face down a deadline I usually buy a box of Pizza Rolls and tear through them. This is bad – a box of 15 can total about 12-14 points on the new Weight Watchers plan. As much as I enjoy writing, I imagined by the time I finished a new book I’d put on 40 pounds. I can’t do that with every book!
I devised this recipe one night when I had the munchies and didn’t want to resort to ice cream or cookies. I had phyllo dough left over from when I had made some low-point fruit turnovers. A quick survey of the fridge yielded one-point cheese sticks and pizza sauce. It all clicked.
This recipe I modified yielded 10 rolls at 7 points – not fat free, but a better alternative to the store-bought pizza rolls. You’ll find the recipe in the Passionate Cooks eBooks, and I hope it works for you when you get the munchies.
