Who doesn’t love comfort food? It’s what we go to when we need a little love in our mouth and stomach. That warmth and delicious flavor that just makes you feel good no matter what sort of day you had or what the weather is like outside. It’s like a hug in a bowl. And yet, we all are trying to eat healthy now-a-days. We are bombarded with messages of eating right, whole grain, less fat, fewer calories. What’s a person to do when they want something yummy, comforting and healthy?
Black beans and rice. It’s comfort food. Hot, yummy and good for you! Can life get any better? Yup – it’s easy to make, too. It’s really the best of all worlds.
Most of the ingredients come out of a can, so it’s really quick and easy. Yet they’re very healthy ingredients – black beans, tomatoes, onions and a few spices. You can make it as spicy as you want, or not at all. It can be a meal or a side dish. It’s really very versatile.
I started making this dish as meal for my family when I was searching for something fast, easy and healthy to cook. We had decided to try to eat vegetarian at least once a week which meant that I really needed to expand my vegetarian repertoire. My neighbor, who is Cuban, mentioned that black beans and rice was one of her favorite vegetarian meals. I thought it sounded intriguing, so I looked up recipes for it on the Internet. As always, there were a good number of recipes, so I did what I always do – took bits and pieces from each one to create my own and then toyed with it so that it fit the tastes of my family. Voila! The recipe you see here today.
So feel free to play with it. Add more spices, or fewer, as you please. And remember, when you’ve had a hard day or it’s cold and nasty outside, there’s nothing that will make you feel better – mentally and physically – than some healthy comfort food.
