My love affair with pasta started when I attended college for six months in Florence, Italy, and it’s still going strong. My first memory of Florence was after a long international flight from JFK airport and a short drive from Pisa, when all the students were seated in the dining room and served a large portion of pasta for lunch. When we started to get up from the table, the waiter said, “No, this is just the first course.” We soon found out that pasta is a staple in Italy and it’s served with almost every meal. All pasta, all the time. Needless to say, I put on a few extra pounds during those six months.
One of the Italian waiters at the hotel where our program was based gave me this recipe and now I make the dish every time I entertain and want to serve something special. It’s not difficult to make and not many people serve this dish at home. It’s my signature dish and I always order it when I go to an Italian restaurant to see if it’s better than mine. Sometimes it is, most of the time, it’s not. There are many variations of this dish, but I hope you’ll like my version. Let me know what you think of it.

Pasta Passionata Alla Carbonara serves from 4 to 6 people and it makes a great meal if there’s any left over. In fact, some people say it tastes better the second day. Serve it with a salad, garlic bread and some wine. My favorite is a sparkling white wine called Moscato d’Asti.
